How far along: 19 weeks

Gender: We find out this week!


Weight gain: 8ish lbs? Will find out at my appointment this week.

Maternity clothes: Yes! Still can fit into some pre-pregnancy pants with my belly band I picked up at target, but maternity is much more comfy. Can wear both types of tops. I picked up a couple maternity workout tops from gap and they are fabulous!

Stretch marks: None yet

Belly button in or out: In

Sleep: Sleeping well most nights.

Symptoms: A little lower back pain. I found out last week I have a very, very rare thyroid disorder that makes me resistant to the thyroid hormone that I take daily. It's pretty much only dangerous when you are pregnant, as you have to take a HUGE dose of the thyroid hormone to overcompensate for the resistance. If the baby also gets this gene (50% chance), it is protected from the excess thyroid hormone I am taking as that baby would also be resistant. If the baby does not have the gene, it would be getting way too much of the hormone, which is fatal. My doctor said people with this gene have a 500% increased chance of miscarriage. Talk about me being a complete hot mess, disaster last week after hearing this. He wanted me to come in ASAP (like, that day) to discuss and also wanted Hadley and all my other close blood relatives to be tested for this gene.  I took Hadley and my mom in with me the next day - not knowing what we would be facing. My doctor said that since I am so far along in my pregnancy, the baby must also have the gene and that there is little to no risk at this point. PRAISE THE LORD!  We will just have to monitor our little one's growth closely and make sure he/she is not measuring small. We are so thankful we received a good report - God is so good!!! 
  
Best moment this week: My sister came to Knoxville this weekend as my nephew (junior at UT) was singing in "All Sing." Us girls (my mos, sis, and me) had dinner before the event Friday night and then headed over to campus for All Sing. I seriously have never felt so old.  Also, Hadley got to meet Tate!

Miss anything:  Really need some sushi. And red wine. And skinny jeans.

Movement: Felt much more movement this week - nothing better!

Cravings: Fruit, peanut butter, seafood

Workouts:  Still running and going to barre regularly. Thank goodness for my running maternity band!

How far along: 18 weeks

Gender: Appointment on 2.13.14! But doing a special gender reveal cake with Brandon over Valentine's dinner on 2.15.14. I found someone to make a gluten free cake for us - yay! Hoping I can stay strong during the appointment and not look at the screen too much!


Weight gain: 8 lbs

Maternity clothes: Totally living in leggings. I wore some Gap maternity leggings yesterday - heaven I tell you. Embracing all the stretchy stuff!

Stretch marks: None yet

Belly button in or out: In

Sleep: Did not sleep well last week, mainly due to some 3 am toddler bathroom wake up calls screams

Symptoms: No new symptoms this week. My thyroid is VERY out of whack. My doctor thinks I may have a very rare gene that could impact the pregnancy - I'm going back today to get tested for it. He wanted my close blood relatives all tested too. My mom and Hadley are coming with me to my appointment today and I'm extremely anxious right now - any and all prayers appreciated that this sweet little baby is healthy and growing.
   
Best moment this week: By belly "popped" this week!

Miss anything: Endurance, fitting into my old clothes, v-i-n-o

Movement: Still just flutters. I'm thinking the placenta my be in the front this time, muting movements, but I won't know until my next ultrasound for sure.

Cravings: Peanut butter, seafood, cereal

Workouts:  Still running and going to barre regularly 

Looking forward to: Finding out the gender!

How far along: 17 weeks

Gender: Appointment on 2.13.14! But doing a special gender reveal cake with Brandon over Valentine's dinner on 2.15.14. He has no idea where we are going :)


Weight gain: Will find out at my appointment 2.13.14. I'm guessing 9ish lbs (OH-EMM-GEEE!)

Maternity clothes: Wore my first maternity jeans this past week - Jessica Simpson skinny jeans.  My tops still fit for the most part. I busted out all my maternity clothes from when I was pregnant with Hadley....not feeling any of them....not to mention none of the pants even fit, so I must find some decent work pants!

Stretch marks: None yet

Belly button in or out: In

Sleep: Sleeping well

Symptoms: Round ligament pain (just a few days this week)
  
Best moment this week: Actually looking pregnant, instead of like I'd eaten too many donuts.

Miss anything: Endurance, fitting into my old clothes. 

Movement: Swear I felt the baby "rolling" around in there. Is there anything sweeter than feeling a baby wiggle around inside you?

Cravings: Peanut butter, ice cream, seafood, and cereal. I mean, really, everything sounds good!

Workouts:  Still running and going to barre regularly. I tire much easier right now but so far my weekly mileage is same as pre-pregnancy. My pace is getting a little slower (it was 9:00/mile this morning which is about 30 seconds slower than my pre-pregnancy pace).Not sure if its that face I've been wearing out the treadmill for a couple months because of the frigid temps, the pregnancy, or both. I wonder how long I will be able to run?

Looking forward to: My next ultrasound and a super bowl party with great friends this weekend! Also looking forward to Brandon feel the baby move :)

ONE
I am extra excited about Valentine's day this year. I've already picked up Hadley's valentines for her classmates (Doc McStuffin's of course!) and pinned tons of cute treats I want to make and share with my work people. Valentine's day is on a Friday this year and I want to do a fun breakfast-for-dinner that evening for my Valentines, complete with heart-shaped red velvet pancakes and eggs!







TWO
It's been freezing here this week and I'm super busy at work with year-end reporting, which means this mama has been wearing out the crockpot. Please do yourself a favor and make this crockpot balsamic pork tenderloin!  It is sooo easy and delish! I served this with a broccoli and cheese quinoa casserole this week.



Ingredients
  • 2-3 pound boneless pork tenderloin
  • 1 cup low sodium chicken broth
  • ½ cup good balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce (I use tamari for gluten free)
  • 1 tablespoon honey
  • ½ teaspoon red pepper flakes
  • 2 cloves garlic, chopped
 
Instructions
  1. Place pork tenderloin into  crockpot. Mix together all remaining ingredients. Pour over pork and set the timer (4 hours on high or 6-8 hours on low).
  2. Once pork tenderloin has cooked, remove from crockpot. Break apart lightly with two forks and then ladle about ¼ – ½ cup of sauce over pork tenderloin.
  3. Store remaining sauce in an airtight container in the refrigerator.


THREE
Seems like Ms. Hadley has figured out how to get out of bed all by herself. She literally scared the sh*t out of me one morning this week when I was getting ready for work as she popped into my room yelling. It's definitely time for a toddler alarm clock - if the sleeping bunny's picture is lit, that means stay in bed and snooze awhile longer. Once the "awake" bunny illuminates, it's okay to rise. I think she will love this!
 
FOUR
Have y'all tried Panera's newest soup, their turkey chili? I had it for lunch one day this week and I really liked it!  It's really different as it's made with pulled turkey, rather that ground meat that is usually found in a traditional restaurant chili. Plus it has garbanzo beans which I love! I'm totally putting garbanzo beans in my chili next time. This soup certainly hit the spot during the cold snap this week!



FIVE
I am starting to make a list of odds and ends I want to get for baby Skeen #2. We have mostly everything we need, but there are a few things everyone talks/blogs about that I want this go around!

How far along: 16 weeks

Gender: Appointment on 2.13.14 - we are going to get them to write the pink or blue verdict in a sealed envelope.  I'm going to take the envelope to my favorite gluten-free bakery and let them make us a small gender reveal cake for me and Brandon to cut into over our Valentine's dinner. I cannot wait!
 
Weight gain: +7 lbs as of a week ago.
 
Maternity clothes: Not yet. I'm having serious trouble finding maternity pants that don't make me look like MC Hammer.  Not sure why they make the thigh and butt area so GINORMOUS in maternity pants.  I did get some great Jessica Simpson skinny jeans, some tops for work, and a couple dresses from Loft and Motherhood Maternity.  Still on the hunt for work pants.

Sleep: Sleeping great!

Symptoms: No real new symptoms to note. My belly is really starting to grow which is exciting to watch. 
  
Best moment this week: Celebrating my 31st birthday - had a wonderful weekend that I will post about soon :)

Gender: Will find just before Valentine's Day. Thinking of sharing that special moment with the hubs over our valentine's day dinner - can't imagine anything sweeter! 
 
Weight gain: +7 lbs (went to the doctor today)
 
Maternity clothes: Not yet. I did go to Motherhood Maternity last night and ordered some things from Gap.
 
Stretch marks: None yet
 
Belly button in or out: In
 
Sleep: Sleeping well except when Hadster yells "Mommmmyyy, I need to go POTTTTYYYY" in the middle of the night :)

Symptoms: Feeling really good in the second trimester thus far. My, uhummm, "girls" finally got the memo I am pregnant :)
 
Best moment this week: Taking Hadley to her first TN basketball game. She had so much fun singing Rocky Top (the man next to us really enjoyed her rendition!) and clapping along with the crowd. She had so much more fun that I thought she would!
 
Miss anything: Would not mind a nice glass of vino right now, or sushi. Or both.
 
Movement: Still feeling little flutters and ready for some kicks!
 
Cravings: Fruit and eggs. Anything ethnic but that's pretty norm for me.
 
Workouts:  Still running and going to barre regularly. I ordered the Gabrialla Support Belt for running, excited to try it out when my bump gets bigger.
 
Looking forward to: Brandon coming back home as he's been working out of town this week.  My birthday this weekend - Brandon has planned something special for us - is it Friday yet?

Here are a few dishes I've made recently that are definitely going to stay in the rotation. All are gluten free and made with real ingredients.  I'm especially looking forward to the buffalo chicken wraps soon!

Easy Baked Tilapia 

 
Really simple but really good!

Ingredients
  • 4 tilapia fillets
  • Olive oil
  • 1 teaspoon steak seasoning
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • Dash garlic powder

Directions
  1. Place fillets in a greased large baking dish. Spritz with olive oil (I used my Misto). In a small bowl, combine the remaining ingredients; sprinkle over fillets.
  2. Bake at 425° for 10-15 minutes uncovered or until fish flakes easily with a fork.
Notes: This was really flavorful for such a simple recipe. Great for busy weeknight meal.


    Crockpot Buffalo Chicken Lettuce Wraps

    Ingredients

    For the chicken:
    • 24 oz boneless skinless chicken breast
    • 2 celery stalks
    • 1/2 onion, diced
    • 1 clove garlic
    • 16 oz fat free low sodium chicken broth
    • 1/2 cup hot cayenne pepper sauce (I used Frank's)
    For the wraps:
    • 6 large lettuce leaves (I used Iceberg)
    • 1 1/2 cups shredded carrots
    • 3 large celery stalks, cut into 2 inch matchsticks

    Directions
    1. In a crock pot, combine chicken, onions, celery stalks, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). Cover and cook on high 4 hours.
    2. Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes.
    3. To prepare lettuce cups, place buffalo chicken mixture in each leaf, top with shredded carrots, celery and dressing of your choice. Wrap and enjoy! I served with a little steamed brown rice on the side.
    Notes: These were so good!  Totally satisfied my craving for wings.  Loved the lettuce wrap idea for this recipe.

    Turkey Quinoa Meatloaf

     

     

    Ingredients
    • 1/4 cup quinoa
    • 1/2 cup water
    • 1 tsp olive oil
    • 1 small onion, chopped
    • 2 large clove garlic, chopped
    • 2 lbs ground turkey (I used half 93% and half 99% ground turkey)
    • 2 tbsp tomato paste
    • 3 tbsp Worcestershire sauce + a few splashes
    • 1 egg + 1 egg white
    • 1-2 grated carrots
    • 1 1/2 teaspoons salt
    • 1 tsp ground black pepper
    • 1/4 cup tablespoons brown sugar
    • 1/4 cup ketchup
    • 1 tbsp mustard
     
    Directions
    1. Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
    2. Preheat oven to 350 degrees.
    3. Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool.
    4. Stir the turkey, cooked quinoa, onions, tomato paste, grated carrots, 3 tablespoons Worcestershire, egg + egg white, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into 2 loaves on a foil lined cookie sheet. Combine the brown sugar, ketchup, mustard, and a few splashed of Worcestershire in a small bowl. Rub the paste over the top of the meatloaves.

    A few new recipes

    Here are a few dishes I've made recently that are definitely going to stay in the rotation. All are gluten free and made with real ingredients.  I'm especially looking forward to the buffalo chicken wraps soon!

    Easy Baked Tilapia 

     
    Really simple but really good!

    Ingredients
    • 4 tilapia fillets
    • Olive oil
    • 1 teaspoon steak seasoning
    • 1/2 teaspoon dried parsley flakes
    • 1/4 teaspoon dried thyme
    • 1/4 teaspoon paprika
    • 1/8 teaspoon onion powder
    • 1/8 teaspoon salt
    • 1/8 teaspoon pepper
    • Dash garlic powder

    Directions
    1. Place fillets in a greased large baking dish. Spritz with olive oil (I used my Misto). In a small bowl, combine the remaining ingredients; sprinkle over fillets.
    2. Bake at 425° for 10-15 minutes uncovered or until fish flakes easily with a fork.
    Notes: This was really flavorful for such a simple recipe. Great for busy weeknight meal.


      Crockpot Buffalo Chicken Lettuce Wraps

      Ingredients

      For the chicken:
      • 24 oz boneless skinless chicken breast
      • 2 celery stalks
      • 1/2 onion, diced
      • 1 clove garlic
      • 16 oz fat free low sodium chicken broth
      • 1/2 cup hot cayenne pepper sauce (I used Frank's)
      For the wraps:
      • 6 large lettuce leaves (I used Iceberg)
      • 1 1/2 cups shredded carrots
      • 3 large celery stalks, cut into 2 inch matchsticks

      Directions
      1. In a crock pot, combine chicken, onions, celery stalks, garlic and broth (enough to cover your chicken, use water if the can of broth isn't enough). Cover and cook on high 4 hours.
      2. Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with two forks, return to the slow cooker with the 1/2 cup broth and the hot sauce and set to on high for an additional 30 minutes.
      3. To prepare lettuce cups, place buffalo chicken mixture in each leaf, top with shredded carrots, celery and dressing of your choice. Wrap and enjoy! I served with a little steamed brown rice on the side.
      Notes: These were so good!  Totally satisfied my craving for wings.  Loved the lettuce wrap idea for this recipe.

      Turkey Quinoa Meatloaf

       

       

      Ingredients
      • 1/4 cup quinoa
      • 1/2 cup water
      • 1 tsp olive oil
      • 1 small onion, chopped
      • 2 large clove garlic, chopped
      • 2 lbs ground turkey (I used half 93% and half 99% ground turkey)
      • 2 tbsp tomato paste
      • 3 tbsp Worcestershire sauce + a few splashes
      • 1 egg + 1 egg white
      • 1-2 grated carrots
      • 1 1/2 teaspoons salt
      • 1 tsp ground black pepper
      • 1/4 cup tablespoons brown sugar
      • 1/4 cup ketchup
      • 1 tbsp mustard
       
      Directions
      1. Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
      2. Preheat oven to 350 degrees.
      3. Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool.
      4. Stir the turkey, cooked quinoa, onions, tomato paste, grated carrots, 3 tablespoons Worcestershire, egg + egg white, salt, and pepper in a large bowl until well combined. The mixture will be very moist. Shape into 2 loaves on a foil lined cookie sheet. Combine the brown sugar, ketchup, mustard, and a few splashed of Worcestershire in a small bowl. Rub the paste over the top of the meatloaves.
